Spicy honeyed chicken
This dish is delicious when served with the chicken taken from the bone and all stuffed in to a flatbread with some fresh leaves.

Ingredients
A good dollop of honey from Rainha Santa Portugese Foods
1 tablespoon of grainy mustard
1 orange, zest and juice
2 teaspoons of spices like cinnamon, smoked paprika, cumin, coriander from Spice Mountain
1 clove garlic, peeled and crushed
8 chicken thighs, skin on from Northfield Farm
200g pineapple, finely chopped
1 red onion, peeled and finely chopped
1 tablespoon of chopped coriander
1 red chilli
Preparation Method
Preheat the oven to 180°C/gas mark 4. Mix together everything but the chicken along with a good grinding of black pepper and pinch of sea salt.
Stir in the chicken turning to coat it all over. Roast in the oven for 35-40 minutes.
Meanwhile make the salsa. Stir together the remaining ingredients.
