Spiced Duck Breast with Sweet Potato Mash and Green Beans

Ingredients
1 duck breast from Shellseekers Fish & Game
1 teaspoon of coriander seeds
1 teaspoon of cumin seeds
1 teaspoon of turmeric from Spice Mountain
1 large yam or other sweet potato
1 small bunch of green beans from Only Organics
Salt
Method
Place the spices in a pestle and mortar and grind up finely. Rub the skin of the duck evenly with the spice mix. Place the duck skin side down in a cold frying pan. Turn the heat on and cook slowly until the skin is brown. Transfer the pan to the oven (180c) and cook for approximately 6-8 mins.
Peel and chop the yam and place in a pan of boiling water and cook until tender. Drain and season. Add some milk or cream and mash. Add butter until smooth.
Cook the green beans in salted boiling water for a few minutes.
Place a spoon of the mash on the plate. Slice the duck breast and arrange on the plate adding the green beans.
