George's marvellous jellies

In need of a festive British pudding? This is a great recipe that will please adults and children alike!

Makes 12

Preparation time 40 minutes plus 8 hours setting time

Cooking time 10 minutes

Ingredients

350g strawberries, cut in half from Jock Stark

200g sugar

juice of half a lemon

100ml white wine from the Wine Pantry

16 gelatine leaves

500ml milk from Neals Yard Dairy

2 tsp vanilla extract

Preparation Method

Place all but four of the strawberries in a pan with 100g of the sugar, the lemon juice and 250ml water. Cook for 10 minutes until the strawberries are soft and have coloured the water. Strain through a jelly bag, leaving it to hang for as long as your patience dares you! Stir the wine in to the strawberry liquor and discard the fruit left in the bag.

Reheat half of the strawberry liquid until just hot, then drop in four gelatine leaves that have previously been soaked in cold water until soft (about five minutes).  Swirl to melt completely. Divide this mixture between 12 100ml tumblers, then get them into a fridge to set. This will take about an hour.

Stir together the milk, vanilla and the remaining sugar. Warm half of this, then add four softened gelatine leaves (as above). Once the strawberry layer has set, pour on the milk layer. Place back in the fridge to set.

Repeat the process with the remaining strawberry jelly, warming and adding four leaves of softened gelatine, then pouring in to the glasses. Set, then repeat with the remaining milk, warming and adding the last of the gelatine.

When the jellies have set take the four strawberries left over, cut into thin strips and decorate the jellies with a red cross to serve.
