All Things Nice at the Demo Kitchen

“What are little girls made of? Sugar and spice and all things nice! That’s what little girls are made of!” So the saying goes, and at this Thursday’s Demonstration Kitchen, chef Lesley Holdship will be focusing on just that; sugar and spice. This week’s menu is a mixture of Mediterranean-inspired dishes and exotic spices.
Lebanese Pizza with Spiced Lamb
Much lighter than the Italian version, Lebanese pizzas are perfect served with romaine lettuce leaves and pomegranate seeds.
Key Ingredients:
- Lamb from Rhug Estate
- Mixed spices from Arabica Food & Spice Company
- Feta cheese from Borough Olives
Baked fish with potatoes and fragrant spices
This is a versatile dish in which the fish can be substituted for whatever is in season.
Key Ingredients:
- Fillets of white fish such as haddock or pollock from Furness Fish and Game
- Mixed spices from Spice Mountain
- New Potatoes from Turnips
Exotic fruits poached in port with five spice
This is a rich treat with strong spice flavours of cardamon and star anise.
Key Ingredients:
- Pineapple and oranges from Jock Stark
- Star anise from Spice Mountain
- Crème fraiche from Real France
