The Easter celebrations at Borough continue with a Demo Kitchen dedicated to foods traditionally cooked during Greek Easter.
Lida Papamatthaiaki is a trained chef and a digital anthropologist, focussing on food and the senses. She delivers many of trader Oliveology’s popular cooking workshops at Borough Market and will be sharing her love of vegetarian and vegan food using the array of produce available from the stall.
She works closely with Marianna at Oliveology, delivering their masterclasses and we're delighted that Marianna will be joining her on stage for parts too!
Lida's menu will include:
Tahinosoupa me fide (Tahini soup with angel hair pasta)
Revythada with a twist (A twist on the classic oven baked chickpeas)
Prasoselino (Leek, celery leaf and potato stew with tomato sauce)
Kolokuthopita glukia (Sweet squash pie with grape molasses, walnuts and Corinth raisins)
Demos take place every Thursday and Friday from 1pm-2.30pm in the Market Hall. The Demo Kitchen is free to attend with recipes, tips, tricks and tasters to take away with you.
