For some time now, trader Heritage Cheese have been delighting crowds selling award-winning Corleggy cheeses.
Now the man behind the cheese, Silke Cropp, who is arguably one of the most influential cheesemakers in Ireland, joins Borough regular (and MBE recipient!) Paul McIntyre at the Demo Kitchen for a session showcasing the versatility and flavour of his cheese, with discussions around raw cheese production along the way.
Follow the smells of cheese wafting through the Market to find Paula and Silke at the Demo Kitchen making:
- Silke’s “Cavanbert” baked whole in brioche with garlic buttered wild mushrooms and tarragon
- Grilled lamb, smoked candied celery, carlin pea and Creeny cheese salad
- Pumpkin gnocchi with coppa and Drumlin veloute, goat’s cheese and pumpkin seed crumble
- Walnut cake with Corleggy goat cheese, chestnut honey, grilled pear
Demos take place every Thursday and Friday from 1pm-2.30pm in the Market Hall. The Demo Kitchen is free to attend with recipes, tips, tricks and tasters to take away with you.
