Selina Periampillai is a British-born Mauritian food pioneer, self-taught chef and author of the recently published book The Island Kitchen
For her first demo at Borough Market, Selina will present a preview of the dishes discovered on her travels around the islands of the Indian Ocean. Get ready to learn about the flavours of the colourful markets of Mauritius, the aromatic spice gardens of the Seychelles, the fishing coasts of the Maldives, the lagoons of Mayotte and the forests of Madagascar.
Selina's menu will include:
— Fish vindaye
— Gateau piment with coriander chutney
— Sardines with lemon, chilli and paprika
— Seychelles aubergine and chickpea cari
— Okra and tomato salad with spring onions
Demos take place every Thursday and Friday from 1pm-2.30pm in the Market Hall. The Demo Kitchen is free to attend with recipes, tips, tricks and tasters to take away with you.
