Neil Forbes is back in the demo kitchen to celebrate the Celtic fire festival.
Honouring the coming of summer and the fertility of the year ahead, the ancient festival connects people to the land and produce and the changing of the season. It’s one of the largest events held in Edinburgh, home to Neil’s sustainable restaurant Café St Honoré—so expect some sparks to fly.
Neil’s menu will include:
Mussels, apple juice, thyme and cream
Wood pigeon salad with lentils, beetroot and creamed goats cheese
Brose with spring vegetables including asparagus, baby carrots
