Food writer, supper club host, cookery teacher and private chef, Kathy writes about the gluts in her organic vegetable patch and how she cooks when there’s a kitchen full of courgette or whatever happens to be glutting at the time. For her first demo at Borough she takes the concept and applies it to the glorious bounty spilling out of the greengrocers stands at Borough Market right now.
Kathy's menu will include:
Aubergine rolls filled with mozzarella, prosciutto and homemade pesto
Tomato and basil tarts
Beetroot soup with mackerel
Seared venison bruschetta with raw bulb fennel, apple salad, pickled blackberries
Courgette cake topped with feta and thyme cream cheese frosting
Plum and almond pots, crème fraiche
