Luke Mackay makes use of some of the innovative products from the Food Futures Market in his vegan cooking demo
The Food Futures Market is showcasing innovators, disrupters and social enterprises who lead the way with the pioneering spirit that Borough Market embraces and supports.
Luke usually showcases his impressive talent through a plethora of meaty dishes, easily discovered by typing his name into the recipe search on the Borough Market website. This Friday, he will be out of his comfort zone and learning new things, cooking a delicious vegan menu using products from food innovators and entrepreneurs addressing the most pressing issues of our time.
His menu will include:
- Coconut panna cotta and mango granita with a chai, pecan and coconut granola crumb (Dairy free /sugar free/ vegan)
- Honeycomb chocolate, honey and macadamia nut truffles (Sugar free /dairy free/ vegan)
- Faux gras and quick fig compote crostini with pea shoots and grated truffle (Vegan)
- Smoked corn with spicy tiger nut dipping sauce and pickled radishes (Vegan)
Demos take place every Thursday and Friday from 1pm-2.30pm in the Market Hall. The Demo Kitchen is free to attend with recipes, tips, tricks and tasters to take away with you.
