Chef, writer and broadcaster Paula McIntyre is back in the demo kitchen this Friday 7th October, focusing on sustainable Slow Food produce.
Northern Ireland director for Slow Food UK and Borough Market regular, Paula will be cooking with a variety of seasonal Market ingredients, including nuts, squash and flat fish. She'll be showcasing a variety of dishes, offering tips and techniques for cooking at home with some of the best produce the Market has to offer at this time of year.
Paula's menu will include:
Turnip soup with pickled cobnuts, apple and celery leaf
Toasted barley salad with speck, Stichelton, chestnuts and chestnut honey dressing
Plaice with cobnut tarator, grilled squash and roast onion yoghurt
Walnut and chocolate puddings, espresso and candied walnut cream
