Demo kitchen: Oysters

Expect big, bold flavours with new season’s oysters from another first timer in our demo kitchen, Simon Lamont

An omnivorous foodie and a classically trained chef, Simon knows his oysters, co-creating SHUCK London and previously working with the Wright Brothers at Borough Market.

Drawing on the great selection of oysters in the Market right now, he'll talk through the varieties available, the differences between them and how best to cook them.

His menu will include:

Oyster ceviche

Rockefellar filo

Miso poached oyster dashi

Flame-grilled seaweed oyster

Fried oyster taco
