Chef, broadcaster, cookery writer and Director Northern Ireland to the Slow Food UK board, Paula McIntrye celebrates this important date in the Christian calendar with a collection of dishes using ingredients steeped in symbolism and tradition.
Like Easter Sunday, there are many food traditions associated with this sacred day and Paula will be showcasing these, using seasonal produce from the Market.
Paula's menu will include:
Carlin pea, anchovy, wild garlic and lentil salad with lemony dressing
Scallion pancakes with quail eggs, dukka and yoghurt, feta and sumac dressing
Quick lamb ragu with hand rolled orchiette
Pomegranate balsamic caramelized figs, orange and PX sherry syllabub with pax cakes
