Chef Philip Juma is cooking traditional Iraqi cuisine in support of the AMAR Foundation
On Friday 17th June, incredible chef Philip Juma, of Juma Kitchen, will be joining us in the demo kitchen to cook traditional Iraqi cuisine in support of the AMAR Foundation.
Having joined forces with the British-Iraqi charity to raise awareness about Iraq’s rich cultural and culinary heritage and to help feed the country’s most vulnerable families during the month of Ramadan, Philip is on a mission to share some of Iraq’s edible national treasures, celebrating tastes straight from the streets of Baghdad.
His menu will include:
Spiced baba ganoush, garnished with fresh pomegranate and served with flatbreads
Barbecued Iraqi kebabs made from minced lamb, lamb fat, salt and spices
Dolma: stuffed onion shells, stuffed peppers and stuffed vine leaves with lamb mince and rice and spices
Chicken in a rich saffron sauce with rice
Along with the usual tips, inspiration and tasters you can also find the AMAR Foundation next door at the pod, explaining their work and answering any questions you may have.
