Join us as we celebrate the female cheffing talent behind Severn Sisters

This month we celebrate the female cheffing talent behind Severn Sisters, a group of 11 chefs who’ve banded together to cook up a multicultural feast, in aid of Action Against Hunger at Borough Market on October 4.

Before their big feast however, we've persuaded them to join us in the demonstration kitchen, where they'll be cooking up a vast range of delicious dishes using seasonal Market produce.    

Thursday 7th September 12.30-2pm
Olia Hercules - Kaukasis

Offering a taste of things to come, first into the demo kitchen we welcome Olia, author of Mamushka and recently published sensation Kaukasis The Cookbook, returning to the Market with lyrical stories of her culinary journey through Georgia, Azerbaijan and beyond

Olia's menu will include:

Charkhali - beetroot marinated in plum sauce
Kohlrabi and sorrel salad with tkemali dressing
Qutabs - stuffed fried breads with herbs and cheese, offal and spices

Alissa Timoshkina - Russian/Ashkenazi dishes

Alissa has combined her passion for cooking with her professional career in cinema, launching KinoVino, a cinema–supper club. Drawing on her Russian heritage Alissa will be presenting her take on some Russian/Ashkenazi classics 

Alissa's menu will include:

Rye bread crostini with dill butter, radishes and charred spring onion
Spicy red kidney bean stew with feta, walnuts and fresh herbs
Blintzes stuffed with apricot ricotta cheese, served with caramelised apricots and flaked almonds
Honey, apple and thyme tea infusion

Zoe Adjonyoh - Plates from across Africa 

The founder of Brixton-based Zoe’s Ghana Kitchen makes her first appearance at the demo kitchen with a gluten free and largely vegan menu that explores the wider cuisines and flavours from the great continent of Africa 

Zoe's menu will include:

Red Red
Spinach & Agushi
Pan Fried Tilapia with Kpakpo Shito Salsa
Okra Fries 

Thursday 28th September - 12.30-2pm
Xanthe Clay & Dr Caroline Gilmartin - Fermentation

Author, food writer at The Telegraph and President of the Guild of Food Writers, Xanthe joins forces for a masterclass in fermentation with her friend and fellow enthusiast Caroline Gilmartin 

Their menu will include:

Milk Kefir
Sauerkraut - Asian flavours sauerkraut slaw
Curdito - Bolivian pickle, with corn tortillas and in a Latin salad jar 
Fermented red pepper and tomato pickle - served with grilled goat or lamb, labneh and herbs
