Borough Market is delighted to welcome back chef Patrick Williams to the Demonstration Kitchen stage, this Friday 23rd September
Having trained under Marco Pierre-White, Patrick has long been brightening up lunchtimes at Borough Market with his stall Soul Food. This Friday however, the Soul Food founder will be cooking cooking up a storm at the Demonstration Kitchen, making a variety of dishes with underused varieties of fish that are in plentiful supply in English waters, to highlight the Sustainable Fish Cities campaign during Urban Food Fortnight.
Focusing on sustainable fish cookery, Patrick will be using fish from Sussex Fish. Drawing attention to the sustainable and sometimes unfamiliar varieties Paul Day catches on his day boats and stocks, Patrick will be showing you how to cook some delicious dishes with them.
His menu will include:
Pan fried scallops with tomato salsa
Come and see Patrick in action at this free demo between 12.30-2pm in the Market Hall this Friday, with recipe cards and tips and techniques on how to recreate his dishes at home - along with plenty of tasters.
