Private chef, writer, cookery teacher and presenter Tim Maddams is teaming up with Mario Prati from Tartufaia
Chef, writer, cookery teacher and River Cottage regular, Tim Maddams will be making his debut in the demo kitchen as he showcases his love of foraging and hunting out great produce. Provenance of ingredients is key for Tim, as is taking an active role in acquiring it.
Tim's demo will be packed with seasonal treats, including English truffles from our trader Tartufaia. In fact, trader Mario Prati will be joining Tim in the demo to talk all things truffle, as they celebrate their 10th year of trading at Borough.
Tim's menu will include:
White spelt “stricheeti” pasta, with cavolo nero and English truffle
Pheasant, squash and pearled barley 'risotto', gremolata
Scented geranium ice cream, oat crumble, honey poach apricots
