Join chef Katherine Frelon in Borough Market's Cookhouse on 23rd June for a vegan cooking extravaganza which will include a shopping trip around the Market.
Having cooked for royals, as well as in a number of Michelin star kitchens, Katherine has a wealth of experience when it comes to food and is a longstanding regular Demo Chef for Borough Market. Her cookbook “Shop, Cook, Eat” was inspired by her lifelong passion for market shopping, and now she will be sharing this passion with you.
Get ready for a cooking class focusing on vegan dishes with Mediterranean influences, from the Amalfi Coast, France, Spain and Morocco, all made using ingredients from Borough Market. Learn how to make unique vegan salads, marinades and dressings and how to select ingredients based on their colour, fragrance and vibrancy. Dishes will include a French roasted peach and beet salad with rocket and hazelnut dressing, a Moroccan Bakula with couscous, and a Spanish inspired baked red lentil falafel salad.
Guests will have a chance to tour the market with Katherine before working alongside her to create the dishes, proving that cooking a plant-based diet can be just as versatile and interesting as cooking with meat and fish, no matter your personal preferences, tastes or dietary requirements!
Katherine will be running the one day Mediterranean course on Saturday 23rd June, with tickets costing £95.

- A tour around Borough Market with Katherine picking up ingredients for the session from our award-winning traders. Here she will share her wisdom on how to select the best and freshest seasonal produce as well as how to craft the perfect pantry that can carry you through the year.
- Demonstrations of delicious vegan dishes with Mediterranean influences
- An opportunity in the afternoon to cook alongside Katherine before sitting down to enjoy your prepared vegan feast for lunch with a selection of vegan wines.
