Gelateria – 3Bis brings an authentic taste of Italy to Borough Market.

Owner Francesco Prati has joined forces with renowned Italian ice cream maker (or ‘gelatiere’) Paolo Raffaelli, to bring the delicious flavours and silky textures of high quality gelato to Borough Market. Francesco has known Paolo for almost 30 years, having grown up together in Rimini in northern Italy.  The texture of gelato is hugely important to its success, so Francesco and his team have been searching long and hard for the perfect British cows’ milk, with just the right fat content to create a classic Italian style of ice cream. Other ingredients are being equally carefully sourced, with a particular emphasis on the wealth of flavours available within the Market, including summer fruits from Chegworth Valley.

Fresh batches of gelato are made on site every day in full public view, using traditional equipment, including an authentic machine from the 1950s.
