Love Your Local Market Demo Kitchen

In support of the Love Your Local Market campaign, on Thursday 28th June, the Demonstration Kitchen will be highlighting the importance Borough Market has played throughout history for Londoners. Inspired by traditional London dishes, Hayley's menu will include:
Pie and Mash with Parsley Liquor
One of the most iconic dishes the London has produced, this is a filling and satisfying dish that's surprisingly easy to make.
Key Ingredients:
- Beef from Cumbrian Speciality Meats
- Spring onions from Only Organics
- Chilli powder from Spice Mountain
Jellied Eels
Developed in London's east end in the 18th century, this dish is still popular in parts of the capital today.
Key Ingredients:
- Eel from Furness Fish and Game
- Onions and peppers from Only Organics
- Vinegar from Le Marché du Quartier
Fruit Crumble with Custard
Fruit crumble is as traditional as it gets! Hayley uses a bay leaf in her custard to really bring out the flavour.

- Mixed fruit from Only Organics
- Bay leaf from from Spice Mountain
