Cured loin with flat white peaches, burrata, basil & chive dressing

A summer salad of sweet peaches, salty charcuterie and creamy cheese

Ingredients

6 flat white peaches
2 burrata or mozzarella
50ml olive oil
2 lemons
A small bunch of chives
20 slices of cured loin
A small bunch of fresh basil
Fresh crusty bread, to serve

Method

Stone and quarter the peaches. Cut the burrata or mozzarella into quarters. Mix the olive oil with the juice of 1 lemon and add salt and pepper to taste. Finely chop the chives and add to the dressing.

Arrange the peaches, loin, burrata and basil leaves on 4 plates, spoon over the chive dressing and serve with fresh crusty bread.
