Tabbouleh

Traditional Levantine salad from Roberta Siao

Ingredients

100g bulgur wheat
½ cucumber, deseeded and finely chopped
1 small onion, finely diced
2 tomatoes, deseeded and finely diced
1 bunch parsley, leaves finely chopped
½ bunch of mint, leaves only, finely chopped
1 tsp baharat
Juice of 1 lime
4 tbsp extra virgin olive oil

Method

Add the bulgur wheat to a bowl and mix in 200ml boiling water. Cover and allow the water to be absorbed for about 20 mins.

Check to see if the bulgur wheat has softened and absorbed all the water. If it is ready but still wet, sieve it to remove any excess water before adding the other ingredients.

Place the bulgur in a large bowl, add the cucumber, onion, tomatoes, parsley, mint, baharat and salt to taste. Mix it together and then add the lime juice and olive oil.

Stir it one more time and adjust the salt, olive oil and lime to your taste. Cover and leave in the fridge until serving.

Can be served with yoghurt, hummus and pitta bread. Also good as an accompaniment with any grilled meat.
