Regional variations have led to a proliferation of recipes for these flaky filo delicacies, but call them what you like (borek, burek, bouréki or, as at Balkan Bites, boureka), as far as Ran Wilson is concerned, none could improve on his grandmother’s traditional Israeli recipe. When Ran wanted to share his passion for bourekas with his son, his determination to master the art resulted in Balkan Bites. These crispy parcels of spinach and feta, tomato and basil, potato and onion or three cheeses, served with a poached egg, green tahini or homemade humus, promise to be bitingly good.
