Winners of the best food producer award at the BBC Food & Farming Awards 2016, Illtud Llyr Dunsford and Liesel Taylor produce cured, cooked, smoked and air dried charcuterie on their small farm in Carmarthenshire, south Wales. At the start of 2015, they converted the farm’s former milking parlour into a state-of-the-art facility, complete with a recipe development space, a well-equipped butchery, Italian drying rooms and a German smokehouse. Here, they use meat from their own herd of pedigree welsh and mangalitsa pigs, as well as high quality pork, beef and rose veal sourced from other Welsh farms, to produce a wide range of sausages, continental classics such as andouille, chorizo and saucisson sec, and British favourites including faggots, haslet and farmhouse ham.
