Warm, heady berbere spice and the aromatic butter nit’ir kibe put the flavours of Ethiopia into the aptly named Ethiopian Flavours. The country has a rich tradition of vegetarian food, so side dishes of lightly spiced pulses and aromatic vegetables such as missir, ye kik alich’a, gomen, fasolia and dubba are commonplace. Have some as part of a vegetarian feast, or combine with the popular beef and chicken stir fried stews, tibs and doro tibs. For an authentic Ethiopian lunch, eat them with ingera, the spongy, sour, crepe-like bread that acts as both a platter and a wrap.
