The Ginger Pig’s three Yorkshire farms are home to a wonderful array of native British rare breed livestock: longhorn cattle; Dorset, Swaledale, Texel and blue face Leicester sheep; and Tamworth, Berkshire, English lop, Gloucester old spot and Welsh pigs, all of which are slowly reared outdoors. The exceptional meat sold at the stall is skilfully butchered and properly hung when appropriate, leaving nothing to waste—the offal, sausages and pies are as prized as the prime cuts.
