As demand for goat’s milk and cheese has increased in the UK, farmers have expanded their milking herds and are consequently left with greater numbers of young males, known as billies—for which, until recently, there was little market.

Nadia—who grew up in Cyprus, where kid goat meat was a common ingredient—and husband Nick Stokes set up Gourmet Goat to help promote a better understanding of this extremely versatile, healthy and sustainable meat, dishing up delicious street food in the form of kofta wraps, Mediterranean-inspired salads and slow-cooked stews.
