Nadia Stokes grew up in Cyprus, where kid goat meat was a common ingredient, prepared with the traditional flavours of the region: wild oregano and bay, lemon and olive oil. Nadia and her husband Nick set up Gourmet Goat to help promote a better understanding of an extremely versatile and healthy source of sustainable meat which had previously been underappreciated on these shores. As demand for goat's milk and cheese has increased in the UK, farmers have expanded their milking herds and consequently are left with greater numbers of young males, known as billies, for which, until recently, there was little market. Gourmet Goat offers an opportunity to try it in some fabulous street food.
