Roast onions with balsamic & dark ale

Ingredients

  • 4 large red onions
  • 100g butter
  • 1 bulb of garlic, across the middle
  • A few sprigs of thyme
  • A splash of olive oil
  • 200ml dark ale
  • 70ml balsamic vinegar
  • 50g caster sugar

Method

Preheat the oven to 180C. Score the tops of the onions into a cross. Place some butter into the centre by slightly fanning the onions out. Arrange them in a tray with the garlic, thyme, salt and pepper, and olive oil.

Place the ale and vinegar in the base of the tray. Sprinkle over the caster sugar and roast for 20-30 mins, until the onions are soft. Serve while hot.
