Alys’ Easter bourbon nests

Beca Lyne-Pirkis’ daughter’s favourite, buttercream-sandwiched biscuits

My youngest daughter’s favourite biscuit is the humble bourbon, so I thought why not jazz it up for Easter by baking them into nest shapes and filling them with even more chocolate? An easy and fun recipe to make any time of the year.


For the biscuits:
200g butter, soft
100g caster sugar
½ tsp vanilla paste or extract
2 eggs
260g plain flour
40g rice flour (replace with plain flour if you haven’t got any)
60g cocoa powder
1 tsp baking powder
A good pinch of salt

For the buttercream:
115g butter, softened
95g icing sugar
20g cocoa powder
½ tsp vanilla paste or extract
