A simple-looking but mighty tasting festive cake from Alissa Timoshkina
250g pine nuts
250g unsalted butter, softened, plus extra for greasing
200g caster sugar
4 tbsp clear honey, plus extra to serve (optional)
115g plain flour
Icing sugar, for dusting (optional)
Preheat the oven to 180C. Lightly toast the pine nuts then set aside to cool. Using a cake mixer or an electric whisk, beat the butter and sugar together until light and fluffy, then add eggs one at a time while continue whisking at lower speed.
Add the honey and plain flour while whisking at lower speed. Take the bowl off the mixing stand and whisk in the nuts. Pour into a buttered baking ring and put in the oven for 30 mins. Cool on a baking wrack and drizzle with honey before serving.
