Pink peppercorn & anise salt

Seasoning with a kick


1k sea salt such as guerande or maldon
2 tbsp red peppercorns, lightly crushed
16 star anise
3 small cinnamon sticks
8 tsp dried red chillies
20 juniper berries, lightly crushed


Mix everything together, divide between sterilised jars and seal tightly. The longer you leave the salt, the hotter it becomes.
