Watermelon margaritas

A delicious watermelon margarita recipe with sweet hibiscus salt, perfect for sunny days


500g fresh watermelon, cut in small pieces, as many seeds removed as possible, plus wedges to garnish
250ml white tequila
125ml fresh lime juice, plus saved lime rinds
125ml orange liqueur such as Cointreau
6 tbsp icing sugar
Hibiscus margarita salt, for preparing the glasses


Place the watermelon, tequila, lime juice, orange liqueur and sugar in a blender. Add ice to come up about ¾  to the top of the blender jar.

Prepare margarita glasses by rubbing the lime rinds around the rim. Dip in margarita salt. Set aside.

Blend the margarita mixture until completely smooth. Taste and add more sugar if necessary.

Pour into the prepared glasses and garnish with watermelon wedges, if desired. Serve immediately.
