Founded by J-Min and Min, Bermondsey Gut Kimchi is a locally based producer of Seoul-style kimchi.
They call it gimchi, closer to the Korean pronunciation, and they make it the traditional way: unpasteurised, naturally fermented, with no added sugar and just the bare minimum of salt.
Their approach is simple: balance, clarity, and subtle complexity through natural fermentation. Just enough salt to let fresh ingredients (and time) do the work.
