Wine and beer-soaked Italian cheeses
Max and Pam spent years travelling around Italy to source the best ‘drunk’ cheeses they could find before setting up shop at Borough Market. Known as ‘l’ubriaco’ cheese in Italian (a language in which even intoxication sounds beautiful), their offering comprises a variety of pasteurised, aged cow’s milk cheeses which have been steeped in alcohol – traditionally vats containing the must of local red wine to aid the ageing process, but more recently branching out into beer, brandy and even gin-soaked cheeses.
