French and Swiss cheeses
Hervé Mons is a third generation affineur and one of France’s most respected and award-laden cheese experts. He sources French and Swiss cheeses from specialist regional producers, then carefully matures them at his facility in St Haon-le-Chatel in the Loire, France. The result is a wide ranging and ever-changing array of spectacular cheese, including mont d’Or and beaufort alpage, which is produced exclusively in the French Alps.
Run by Jon Thrupp, the Borough stall is devoted to bringing Mons’s cheeses to a British audience.
