Bloody mary

by Angela Clutton

A spicy drink that should be more than just a hangover cure

A bloody mary is most usually thought of as hangover cure, thanks to its spicy kick and deep umami-flavours from the tomato. But made well, it is a better drink than for just serving when feeling worse for wear. Make sure it is served as cold as cold can be.

¼ lemon
¼ lime
150ml tomato juice
1 tsp Worcestershire sauce
1 tsp cucumber vinegar or sherry vinegar
A pinch of celery salt
A pinch of sea salt
¼ tsp freshly grated horseradish
25ml vodka
Tabasco sauce
Celery and cucumber to garnish (optional)

Fill a cocktail tin with lots of ice. Squeeze in the lemon and lime, then add all the other ingredients (except the Tabasco and the garnish) and shake well for a minute. Strain into a chilled highball glass, taste and add as much tabasco as you need.

Finish with a grinding of pepper and your chosen garnish.
