Roast onions with balsamic, wet garlic & dark ale

A simple side dish to celebrate the Great British Beer Festival


4 large red onions
100g butter
2 bulbs of wet garlic
A few sprigs of thyme
A splash of olive oil
200ml Samuel Smith dark ale
70ml balsamic vinegar
50g caster sugar


Preheat the oven to 180C. Score the tops of the onions into a cross. Place some butter into the centre by slightly fanning the onions out. Arrange them in a tray with the wet garlic, thyme, salt and pepper, and olive oil.

Place the ale and vinegar in the base of the tray. Sprinkle over the caster sugar and roast for 20-30 mins, until the onions are soft. Serve while hot.
