The simplest but most satisfying dish in Luke Mackay’s Borough Market repertoire
Of the hundreds of recipes that I have written for Borough Market, this is the simplest but also my favourite. My friend Mel, a great cook, first introduced me to it and I keep going back. It is elevated by the best anchovies and sourdough I have ever tasted.
2 slices fresh sourdough bread
16 anchovy fillets
½ shallot, very thinly sliced
Butter the bread generously—my personal taste is to be able to see your teeth marks in it as you bite down. Drape over the anchovies and scatter over the shallots. If serving as nibbles, cut into ‘soldiers’.
