Lemongrass, galangal & manuka honey soda

Ingredients

  • 65g lemongrass, chopped
  • 50g galangal or ginger, chopped
  • Juice of 2 large limes
  • 1 tbsp manuka honey
  • 4 tbsp cider vinegar with honey
  • Rhubarb, pineapple or mango soda, to serve

Method

If you have an electric juicer, then juice the lemongrass, galangal and limes before stirring through the manuka honey and cider vinegar.

Alternatively, place all of the ingredients into a small blender, and blitz at full speed for 1 min. Let the ingredients steep for 1 min, then strain through a sieve, pressing well to extract as much of the liquid as possible. Better still, use your hands to squeeze-out the fibrous husks fully. Pour into a glass bottle. The juice will keep in the fridge for up to a week.

To serve, add 1-2 tbsp of the zingy juice to a glass and top up with your favourite soda.
