Restauranteur Tony Allan’s Borough Market restaurant serves simple, classic seafood dishes. Produce is delivered each morning from Fish!’s own fishmonger or sourced from other Market traders.

Chef-director Nick Melmoth-Coombs shared with us his recipe for squid, chorizo and roasted tomato bruschetta, a simple, flavour-packed starter or lunch dish.

Grovers, a third-generation family business, is a wholesale supplier of fruit, vegetables, salads and herbs to retailers and producers around the city, as well as many of their fellow traders.

The Grover family’s work provides an important link to Borough’s rich history as a hub for fruit and veg wholesale, which you can read about in our story of 1,000 years of the Market.

Khanom Krok

Khanom Krok sells authentic Thai street food, including the street snack that gives the stall its name: small coconut pancakes made in distinctive dimpled pans.

The stall’s owner, Worawan Kamann, shared her recipe for Thai-style chicken with cashews, a perfect celebratory dish for the Songkran festival which takes place in April.

Moishe’s Bagelry & Bakery

Brought to Borough by the team that supplies the bread for Nana Fanny’s street food stall, Jewish bakery Moishe’s creates traditional hand-tied bagels and challah bread.

The name Moishe means ‘from the water’, perfectly describing the traditional method used by the bakers to prepare their bagels: boiled in a pot of bubbling water before being baked until golden.

Marianna Kolokotroni works with independent artisan producers to source exceptional Greek products, including olive oil, olives, vinegars, raw honey, cheeses, dried fruits and nuts.

Via Ed Smith, Marianna shared with us a traditional Greek Easter recipe taught to her by her mum: a gorgeous custardy treat called ‘galatopita’, packed with eggs and dairy to break the Lenten fast.

Clare Finney paid a visit to the Gopaldhara tea lodge in the lush hills of West Bengal to watch the first flush harvest and discover what it is that makes it so sought after.
