Arabica
The menu at this much-loved eastern Mediterranean restaurant draws inspiration from the fertile valleys of Jordan, mountain villages of Lebanon and vibrant cities of Istanbul, Beirut and Tel Aviv.
Arabica’s founder, James Walters, spoke to us earlier this year about finding his tribe at Borough Market, his enduring love of the region’s cuisine, and the launch of his debut cookbook.
Borough Kitchen
Borough Kitchen sells a curated collection of kitchen tools and tableware made by specialist producers, with each piece carefully selected for its functionality, performance and quality.
Everything a home cook needs to prepare and serve their market ingredients is available, whether that’s opening oysters, tempering chocolate, slicing onions or putting on the grandest of feasts.
Borough Wines
Borough Wines offers a range of interesting wines from small, independent winemakers, including a straight-from-the-barrel refill system that’s great for environment and customer alike.
Calvin Pearson, the company’s head of wine, appeared on the Borough Talks podcast to talk about perfect pairings, the meaning of orange wine, and why refillable bottles are the future.
The French Comte
Fabien Joly and Florent Gacon, who hail from Franche-Comté in eastern France, bring the flavours of their home region’s mountains and forests to Borough Market.
Clare Finney heard from Florent about his love of a classic cancoillotte, a highly traditional spreadable cheese with a soft, creamy texture and buttery taste.
Jumi Cheese
The unique products at Jumi Cheese are produced by four family-run dairies in the Emmental region of Switzerland, using traditional techniques and the milk of cows fed on fresh grass and hay.
Two of Jumi Cheese’s contrasting Alpine products provide the unctuous base in Rachel Phipps’s recipe for a sophisticated version of cauliflower cheese.
Ma Ma Boutique Bakery
Ma Ma Boutique Bakery is a gluten-free bakery based in Chiswick, known for handcrafted cakes, sourdough breads and sweet and savoury bakes, made using organic flours and natural ingredients.
Owned by Marzena and her husband Nigel, the bakery began when they couldn’t find anything satisfying on the gluten-free market – so Marzena started baking from scratch.
Maggio’s Confectionery
Massimo Maggioni sells sugar or chocolate-coated almonds sourced from small-scale Italian producers, as well as naturally sweet organic liquorice root.
The almonds are traditionally dished out at Italians weddings. They’re known as ‘confetti’ but unlike our equivalent are categorically not intended for throwing at the bride!
Mons Cheesemongers
Run by Jon Thrupp, Mons Cheesemongers sells French and Swiss cheeses sourced from specialist regional producers, then carefully matured in St Haon-le-Chatel in the Loire, France.
Michael Finnerty, a cheesemonger on the Mons stand, has written a book about his experience at Borough. He shared his thoughts with us on friendship, pride and healthy competition.
Padre
The Padre taco stand in the Borough Market Kitchen was inspired by chef Nick Fitzgerald’s extensive travels around Mexico, which he’s distilled into a menu of vibrant dishes.
Nick joined Giulia Crouch on the Borough Talks podcast to chat about regionality of the country’s cuisine and the essential elements of a perfect taco.
Richard Bramble Collection
Artist Richard Bramble has been trading at Borough for more than 20 years, selling his food-themed printed textiles and hand-painted ceramics alongside prints of the colourful scenes of the Market.
Richard spoke to us about his love of nature, the pleasure of blending functionality with artistry, and the potential offered by his recent move to an indoor stand.
Tartufaia
Named after the Italian word for a woodland in which truffles are found, Tartufaia imports truffles from Italy and Australia, as well as truffle-flavoured oil, honey, butter and brie.
Founder Mario Prati talked about his relationship with suppliers, the work that goes into finding high-quality truffles, and whether pigs or dogs are masters of the art.
