Butterflied mackerel with wasabi & yuzu dressing

Ingredients
- 1 butterflied mackerel
- A thumb of fresh ginger, peeled
- 1 red chilli
- A small bunch of fresh coriander
- Wasabi & yuzu dressing from Fitz Fine Foods
Method
Heat your barbecue with the grill in place to get the bars as hot as possible. Slice the fresh ginger, red chilli and coriander and set aside.
Score the mackerel on both sides, then smear with oil and season with salt and pepper.
When the barbecue is hot, place the mackerel on the grill skin-side down over the hottest area of the coals and cook for about 5 mins, until cooked through.
Drizzle with wasabi & yuzu dressing, then sprinkle the sliced ginger, red chilli and coriander over the top.
