Radnor Preserves began with Joanna Morgan’s love of gardening. Living remotely without electricity, preserving was a way of rescuing the fruits and vegetables of her labour from wastage. Now, with a professional kitchen in the heart of Wales, the marmalades, jellies and chutneys she began gifting to friends and family have gained several awards and a loyal following—but they’re still made the old-fashioned way, with hand cut fruit and mostly local ingredients. Favourites include Smoky Campfire marmalade, a heady combination of grapefruit, citrus fruits, maple syrup and a lick of chilli heat; Belle-Helene preserve, with pears, dark chocolate and a touch of ginger; and Welsh cider and leek chutney.
