Alison Crouch and Elliott John fly to Italy every two months to visit Apennine dairies, where they taste and select the finest parmesan cheese to sell at Borough Market. Regular suppliers include Caseificio Superchina, a cheese-making cooperative which sits at just under 1,000m in the Modenese Appenines, and Azienda Agricola Iris in the tiny hamlet of Rivalto. With just 120 cows, it produces just three or four wheels of parmesan a day. The cheese is accompanied on the stall by a small range of salamis, all of which are made from rare breeds supported by the Slow Food movement.
