13 Acre Orchard is a regenerative orchard in Essex where every effort is made to increase biodiversity, soil health and carbon sequestration and support the survival of heritage fruit varieties.
Steven Brown, the farmer who runs 13 Acre Orchard, talked to us about regenerative systems, eliminating waste and the support provided by greedy chickens.

Arabica To Go
The street food stall pitched beside the Arabica restaurant sells halal chicken shawarma, sliced to order, and freshly cooked falafel wraps, alongside eastern Mediterranean dips, salads and pastries.
Arabica’s founder James Walters shared this fantastic recipe for cashew, sesame & fennel baklava – nutty, buttery, sweet pastry rolls.

The Bath Dairy
This street food stall takes the cheeses sold at the Bath Soft Cheese stand and uses them to create traditional tartiflette and baked cheeses, served alongside thick and creamy milkshakes.
We paid a visit to the beautiful Park Farm in rural Somerset to see those cheeses being produced and meet their inspirational maker, Hugh Padfield.

Flat Cap Coffee
The expert baristas at the Flat Cap Coffee Co cart make perfect espresso-based coffees as well as selling freshly roasted beans sourced from a roastery just up the river from Borough.
Those beans can be put to use as an ingredient in food as well as drinks, as Stuart Ovenden’s recipe for an umami-rich coffee-rubbed ribeye amply demonstrates.

Food & Forest
Food & Forest offers a range of raw, organic nuts, including native varieties grown in their own Kent orchard, alongside roasted savoury nuts and sweet brittles.
Every September Charles Tebbutt and his team head to the orchard for the annual harvest of cobnuts – English hazelnuts. It’s an intense but satisfying job, as outlined in this insightful blog post.

Nana Fanny’s
Nana Fanny’s is famous for its delicious salt beef, as well as other Jewish deli classics such as potato latkes, schnitzels, freshly made falafels and smoked salmon and cream cheese bagels.
From 22nd to 24th September, the stand’s owners, the Lester family, will be celebrating Rosh Hashanah. Last year, Tomé Morrissy-Swan paid them a visit to share in their food-filled festivities.

Paul Crane
Greengrocer Paul Crane has been a familiar presence at Borough Market for many years, his stall weighed down by baskets and bowls packed with a generous selection of colourful produce.
There should be plenty of plums on the stall this month, perfect for Ed Smith’s roast plum pavlova recipe from the Borough Market Cookbook.

Richard Haward’s Oysters
For over 100 years the Haward family have been harvesting oysters in the shallow creeks leading from the river Blackwater to the west of Mersea Island.
