It’s difficult to imagine transforming the tiger nut (not, misleadingly, a nut at all but a root tuber) into ice cream—but then, it was difficult to imagine turning turmeric into ice cream once, and now we’re all over it. No doubt in a year’s time we’ll feel the same way about Ruby and Grace. As well as vegan coconut milk and tiger nut ice cream, the Borough Market stall sells tiger nut granola and tiger nut ‘milk’—all inspired by the taste and flavours of the founders’ grandma’s kitchen.
