One of Brindisa’s skilled jamón carvers, Manuela Villegas Restrepo, talked to us about her Colombian roots, the craft of the ‘cortadora’, and the work that goes into producing perfect ham.

Doreen Gittens sells jams and jellies made from nutmeg, guava and grapefruit, as well as pepper sauces and other products sourced directly from a family estate on the island of Grenada.

She was among the traders who shared with Gurdeep Loyal their tips for preserving the Market’s glorious abundance of summer produce in condiments, pickles and preserves.

The Flour Station

Part of the Market since 2004, The Flour Station bakes a wide range of sourdough and speciality breads, cakes and pastries with a commitment to authentic methods of craftsmanship.

The Flour Station has for many years been committed to our Plan Zheroes food waste partnership, donating their leftover bread to help feed people in need, as explained in our video.

Greedy Goat

The Natural Smoothie Co.

As the same suggests, the Natural Smoothie Co is devoted to delicious smoothies made using 100 per cent fresh fruit – no concentrates, dairy products, ice or sorbets.

Each cup contains around 300g of pure fruit, the equivalent of seven or eight individual pieces. Owner Liz Guru uses extremely ripe fruit for maximum possible flavour.

Padella

Padella offers a simple menu of fresh pasta dishes, utilising traditional Italian techniques and seasonal flavour combinations created using quality British produce.

Pimento Hill

Dawn Smith uses traditional Jamaican methods and ingredients to create a select range of sauces, seasonings and jellies, tapping into recipes that have been used for generations.

Melissa Thompson used two of Dawn’s signature products as the inspiration for her barbecued mackerel salad with piles of summer veg – minimum effort, maximum flavour.

Porteña

Porteña sells traditional Argentine street food, include empanadas – hearty pasties with a variety of fillings – and alfajores filled with the stand’s famously sweet and gooey, caramel-like dulce de leche.

The Tinned Fish Market

The Tinned Fish Market works with canneries across Portugal, Spain, France and England to source exceptional, sustainably produced tinned fish, created using traditional, hands-on techniques.

The stand’s highly knowledgeable manager, Stephen Lucas, talked to us about artisan canneries, seasonal time capsules, and the parallels between tinned fish and good wine.

Wiltshire Chilli Farm
