Batera—Pintxos by Mimo

From the husband and wife team behind Mimo—Borough’s cookery school, shop and event space—comes Batera. Meaning ‘all together’ in Basque, Batera draws on the culture of the pintxos bars that line the streets of the old town in San Sebastian. Made mainly with British produce from fellow Borough Market traders, executive chef Joseba Lasa and head chef Ander Macho carefully craft traditional pintxos, such as skewers of Scottish prawns with cider vinaigrette; marinated artichokes with mint, toasted almond and Idiazabal pesto; and Basque classics such as red wine braised oxtail and salt cod. Wash it down with a cool glass of Zapiain natural cider poured the traditional way, from a height.
