Ginger Pig’s meat is sourced from a network of like-minded farmers, who between them raise a wonderful array of native British livestock, with an emphasis on animal welfare standards.
The business’s founder Tim Wilson supplied us with this recipe for a festive roast porchetta, a magnificent stuffed pork loin for Christmas Day.
L’Ubriaco Drunk Cheese
Known in Italy as ‘ubriaco’ cheeses, the products sold by this eponymous Borough Market stall are created by steeping cow’s milk cheeses in wine as they age.

McLaren’s Christmas Pudding
McLaren’s Christmas Pudding is a regular seasonal presence at Borough, offering a richly flavoured, slow-matured pudding, made from butter rather than suet for a lighter, creamier texture.

Neal’s Yard Dairy offers a truly stunning array of cheeses sourced from specialist British and Irish cheesemakers, many of which are aged in its own maturing rooms in Bermondsey.
Spendwood, a Berkshire sheep’s milk cheese with a sweet, milky flavour and a slight piquancy, is a key ingredient in a lovely winter salad recipe by Elly Curshen.
Oroshi
Oroshi brings traditional Japanese ‘robatayaki’ – marinated and grilled skewers – to the Borough Market Kitchen, using sustainably sourced, high-quality vegetables, meat and fish.

Whirld
Sold exclusively at Borough Market, Whirld’s awe-inspiring range of creamy, crumbly fudges are handmade to traditional recipes, using wholly natural ingredients.
Proceeds from the stall are used to make regular donations to Casa Guatemala, a charity working in rural Guatemala, and the SUGi Project, which restores urban ecosystems by planting pocket forests.
