Based in East Sussex and run by self-taught cheesemaker Arthur Alsop, Alsop & Walker uses milk from a local farmer to create a highly distinctive range of exceptional English cheeses.

Arthur spoke to us about the special mould used to produce his most famous creation, Lord London, a bell-shaped, semi-soft cow’s milk cheese.

The Black Pig

The Black Pig creates extraordinary ciabatta sandwiches packed with slow-roasted Blythburgh free-range pork, which is finished over the coals of a ceramic grill.

On our Instagram feed, the stand’s founder Nick Willoughby talked us through the steps involved in creating one of his world-famous sandwiches.

Kolae

The acclaimed Kolae grill and bar is named after the southern Thai technique of cooking skewers of meat, seafood or vegetables over an open flame, basted with a coconut curry sauce.

Andy Oliver, one of the restaurant’s co-owners, shared with us a simple recipe for a southern Thai-style grilled chicken dish, perfect for your home barbecue.

La Pepiá

5th July is when Venezuelans celebrate their independence day. A perfect excuse to visit La Pepiá for a jar of Venezuelan salsa, handmade in London using traditional ingredients.

The salsas – there are three to choose from, with varying levels of spiciness – play a key role in Bettina Campolucci Bordi’s recipe for mushrooms and greens on cheesy polenta.
